This summery breakfast is put together in a few minutes before you go to bed and you wake up to a creamy, delicious and nutritious treat! Soaking the nuts and seeds along with the oats improves the digestibility of their nutrients too.
50g porridge oats (or oat bran)
1tbsp seeds (any type eg pumpkin, sesame, poppy, chia, linseed/flaxseed, hemp…)
1 tbsp nuts (chopped or whole eg almonds, hazelnuts, Brazil nuts…)
50-100ml water (depending on your preference for final consistency)
150g natural yoghurt
2 tbsp berries (any type eg raspberries, blueberries, strawberries, can be fresh or frozen)
- Mix together all the ingredients except for the berries
- Top with berries, cover with a lid or cling film and leave in fridge overnight
- Enjoy cold or warm (heat in microwave for 30-60 seconds or gently in a heavy-based pan on the hob)
- If you want to make more, this keeps for 4 days in the fridge
You can also make a nice autumnal version of this – add half a teaspoon of cinnamon, a teaspoon of raisins and used chopped apple instead of the berries.
